The base wine undergoes traditional white wine vinification, with cold maceration of the crushed grapes and fermentation that is carried out partly in stainless steel and partly in oak barriques; in the spring following the harvest it then undergoes its prise de mousse in bottle.
After the second fermentation in the bottle, the wine matures on its lees for over 4 years.
A refined “Metodo Classico” sparkling wine with a straw yellow colour and pale greenish highlights, as well as a delicate, continuous perlage; it offers scents of ripe fruit, hazelnuts, white flowers and flint, refreshed by a faint hint of citrus fruits. On the palate the carbon dioxide gives it a creamy sensation that combines perfectly with the well-balanced flavour, the mellowness of the fruit, the mineral tanginess and the fresh, harmonious acidity.
