The base wine is produced by fermentation in temperature-controlled stainless steel vats.
Maturation of the base wine in stainless steel is followed by bottling and the prise de mousse in bottle. The wine then matures for a long time on the yeasts, prior to being disgorged.
Bright straw yellow colour and a fine, persistent perlage. On the nose, it offers an elegant bouquet with citrus-like notes and hints of yeast and roasted almonds. On the palate it is broad, dry, deep and forthright, with very fresh acidity that sustains the flavour into the long, clean finish.
