The base wine is produced by fermentation in temperature-controlled stainless steel vats.
Maturation of the base wine in stainless steel is followed by bottling and the prise de mousse in bottle. The wine matures for over 48 months on its yeasts, prior to disgorgement.
The real pride of Castelveder, produced from a strict selection of Chardonnay grapes, it reveals a straw yellow colour with greenish highlights and rich, intense scents of ripe fruit, sweet spices, vanilla, yeast and fragrant crusty bread. Its flavour is broad and silky, full and persistent, mellow and elegant, and it is sustained by delightfully refreshing acidity.
